Starch information page

Starch occurs in two forms - amylase and amylopectin and is found in cereal grains and other vegetables and plants. In grain it is contained in a husk of cellulose.

For the body to utilize this nutrient it must be freed from its protective cellulose casing which is done by grinding or cooking. The starch molecule has an affinity to water and readily absorbs it, thereby increasing in volume.

Once free of the protective casing, digestive enzymes can act upon it, and prepare it for use in the body as a nutrient.

Long term baking of it will turn the molecule into soluble dextrin - such as in the case of a crust of bread or toast.
